You can use olive oil if you prefer, or a mix (my preference... I get the healthy fats of the olive oil and a little flavor of butter). Sprinkle with salt and pepper, and voila, done. You can also use kale anywhere you'd use cooked spinach, really. Shred it up really fine and use it in soups and stews so it disappears. Stir fry works too, as you found out. If you have a juicer you can run it through that, too.
