Again, because of the holidays, this is a slightly abbreviated meal plan, since I'm not responsible for providing dinner for all of the days. Here are the meals I have planned for the week though:
Monday: creamy baked penne & chicken with mushrooms
Tuesday: (fried?) chicken, potatoes au gratin, green beans
Wednesday: venison stew
Thursday: tacos
Friday: turkey, mashed potatoes, stuffing, veggies, cranberries (?), pie
Saturday: not my problem
Sunday: breakfast feast of omelets, strawberries (frozen in the summer), & either blueberry muffins or maybe cinnamon rolls
Sounds yummy :) We got a free spiral ham thanks to sis's mom, so that's our Christmas Eve dinner on the 24th. Yay for relatives that work at Honey Bake Ham! I have hake that I got on sale for $3.99 a pound today (one of the adult kids coming for the holidays is vegetarian... oy). I picked up ground beef, so likely the Boss Man will make pasta and I'll make sauce and we'll have that for dinner one night. I also have a whole chicken in the freezer that I've been saving. Tonight we had a small pork loin, which I picked up again on sale. Tomorrow we're having half of a HUGE package of keilbasa sausage with some sort of sides... probably rice. I might make some kind of jambalaya. Then I still have a 14 lb turkey in the freezer from when the Thanksgiving sales were on, plus a bunch of venison. When sis goes to Chicago to see her mom, the Boss Man and I plan on eating a whole shoulder of venison over the week (we're pretty simple to please... roast the first night, pulled "pork" the second, potted roast the third night, spaghetti with venison sauce the fourth, etc lol). Other than that I've made dozens of almond cookies that were simple and tasty enough that I plan on keeping some of the dough in the freezer for quick cookies for the kids, and a few dozen sugar cookies which are currently being decorated by sis and the twins. :)
ReplyDeleteTry this recipe. It's very rich and yummy. I made it with a graham cracker crust but it would be good with chocolate cookie crumb crust also.
ReplyDeleteNO-BAKE PEANUT BUTTER PIE
4 oz (half package) cream cheese
1 cup confectioners sugar
1 cup peanut butter
1.2 cup milk
8 0z cool whip topping, thawed
1 chocolate cookie crumb or graham cracker pie crust
mix together cream cheese and suagr until smooth. Add peanut buter and mix. Slowly mix in milk. Fold in whipped topping. Put into pie shell and chill for an hour or 2. Drizzle each piece with chocolate syrup when you searve.
