Meatless Monday--Lazy Pasta Bake


This is perfect for days that you are too tired to cook, but still want something homemade for dinner.  If you know that is going to be the case ahead of time, you can cook the pasta and freeze it well far in advance, or a couple days in advance and refrigerate it.  The cheese can also be shredded far in advance and refrigerate or freeze as needed.  The whole thing can be assembled a few hours before you are ready to cook it, so you can just pop it in the oven shortly before you are ready to eat, even!

This pairs great with a salad and/or bread for a quick, easy, and cheap faux-Italian meal!

And, in case you are wondering, this post is brought to you by the fact that, again, I'm too tired to cook.  


Lazy Pasta Bake

2 cups uncooked pasta of your choice
2 cups plain tomato sauce
1/4 tsp onion powder
1/2 tsp garlic powder
1 tsp dried basil
1 tsp dried oregano
1/4 tsp salt
1 1/2 cups mozzarella cheese

Preheat oven to 350.  Cook pasta according to package directions.  Combine cooked pasta and remaining ingredients in a 2-quart casserole dish.  Mix together.  Bake for 30 minutes.
